芙蓉蟹斗因其芙蓉洁白,蟹粉鲜美,极受人们欢迎,成为上海地区历史悠久的地方特色名菜。上海苏州一带更以“阳澄湖清水大闸蟹”驰名,上海地区在30年代,一般多煮吃或蒸吃。一到深秋季节,饭馆、酒店、熟食店都挂牌经营清水大闸蟹。以后人们嫌用手剥太麻烦,又不卫生,于是以经营蟹宴闻名的上海“王宝和酒家”,就由厨师们剔出蟹肉,按口味精心烹制蟹菜uploads/image/20210128/1611771277.jpg
