糟钵头是一道上海的地方传统名菜,属于本帮菜。糟菜中最有名的就是糟钵头了,相传这个菜是上海嘉定一个农家妇女所创。用的也只是些平时不登大雅之堂的下脚料。做法也很简单,将猪舌头,猪肺,猪肚,猪大肠,猪脚爪等改刀成小块,入水氽熟后,放入钵头内,再放入白高汤,料酒,葱姜,香糟卤,用泥土封住钵口,大火烧沸,再小火慢炖上半小时就能开钵了,吃前再撒上青蒜叶,淋上一勺糟卤。这菜吃起来,糟香扑鼻。uploads/image/20210128/1611763593.jpg
