、北京宫保鸡丁

宫保鸡丁是一道闻名中外的特色传统名菜。鲁菜、川菜、贵州菜中都有收录,本来叫油爆鸡丁,因它为清代山东巡抚丁宝桢首创,丁又曾被封为“太子少保”(又称“宫保”),故人们便将此菜冠以丁的封号,改称“宫保鸡丁”。后丁宝桢任四川总督,将此菜带入四川成都,经四川厨师的加工改造,其做法更加讲究,品质更为精良。
